Carrot & Potato Fry Recipe – Easy Side dish for Rice with Step wise pictures. Carrot Potato Fry is one of my all time favourite side dish. It is super easy to make and taste just delicious. It is really tasty on it own or as a side for rice and any gravies.

This dish takes just 10 to 15 mins to make from start to finish. You can serve it with rasam rice, sambar rice, curd rice. Or any variety rice like lemon rice, tamarind rice or coconut rice.This is a great dish to put in your kids lunch box. They will love it for sure.

About Carrot & Potato Fry Recipe

Poriyal is a Tamil term for any fried or sautéed vegetable dish. Palya is a Kannada word, vepudu is a Telugu word, and mezhukupuratti is a Malayalam word. Shredded or diced vegetables and greens, along with spices, are typically shallow fried.

Typically, mustard seeds, urad dal, onions, and the main vegetable are fried before adding turmeric, various spices, dried red chillis, and coriander. Shredded coconut is used as a dressing in Tamil Nadu. All poriyals include some vegetables, lentils, or greens by default, but there are numerous variations of the main vegetable.

Poriyal is a side dish served with rice, sambhar, rasam, and yoghurt as
art of a three-course meal (curds in Indian English). Poriyal is frequently served with chapati.

So far i have shared so many poriyal recipe in this blog. This one is another recipe which my mom makes often. This is the combo which she makes. She also uses beans in this poriyal often. You can infact add any veggies in this like cauliflower too.

Potatoes 

It was introduced to India by Portuguese sailors in the early 17th century, and British colonists spread its cultivation to North India. The potato is one of the most important commercial crops grown in the country. Potatoes are high in fibre, which can help you lose weight by keeping you fuller for longer. Fiber can help prevent heart disease by
maintaining healthy cholesterol and blood sugar levels. Potatoes are also high in antioxidants, which help to prevent disease, as well as vitamins, which help your body function properly.

Carrot 

Depending on the colour, size, and region of cultivation, this well- liked and adaptable vegetable may have a slightly different flavour. Carrots have a slightly sweet flavour from the sugar in them, but they can also have an earthy or bitter flavour.

Mustard Seeds 

They are used as a seasoning rather than a base flavour in many Indian dishes, and they really perk up a lentil or rice dish when fried in a little oil with curry leaves . As a result, mustard seeds are excellent for adding flavour without adding fat to your diet.
