A easy dish which you can whip up in few minutes. Plus it goes great with curd rice, roti, rasam rice, even with some plain steamed rice..Delicious..I have lots of brinjal recipes in this blog, it is one of my favourite veg..

Ingredients for Baingan Masala

  • Brinjal / Baingan – 1 large
  • Oil – 2 tbsp + for shallow frying
  • Mustard Seeds / Kaduku – ½ tsp
  • Cumin Seeds / Jeerakam – ½ tsp
  • Onion – 1 medium chopped finely
  • Green Chillies – 2 chopped
  • Ginger Garlic Paste – 1 tsp
  • Chilli Powder – 1 tsp
  • Coriander Powder / Malli Podi – 2 tsp
  • Turmeric Powder / Manjal Podi – 1 tsp
  • Salt to taste
  • Tomatoes – 2 chopped finely
  • Water – around 1 cup

How to Make Baingan Masala

  1. Cut brinjal into thick rounds, now cut each rounds into strips.
  2. Heat oil for shallow frying. Drop brinjal in and fry till golden. Remove and set aside.
  3. Now drain most of the oil from the pan, keep just 2 tbsp in it.
  4. Add in mustard and cumin. let them pop.
  5. Now add in onions, chillies and saute till golden.
  6. Add in ginger garlic paste and saute for a min or so.
  7. Add in salt and spice powders and mix well.
  8. Now add in tomatoes and cook for couple of mins, add in a splash of water and cook till tomatoes turn mushy.
  9. Now add in another splash of water and when it starts to bubble, add in fried brinjal and mix. Simmer for 5 mins or so.
  10. Serve.
