As you can see there is a long list of ingredients in this. But this is a perfect dish to make when you have friends coming around or having huge parties and stuff like that. Heat water in a sauce pan along with some milk. Add in soya chunks and switch off the flame. Cover the pan and let it rest for 15 mins. Drain it and rinse in cold water. Sqeeze off the extra water and set aside till use. See this recipe for the step by step pictures of how to prepare soya chunks.
Making Kurma Base
Mix ½ cup of milk with cornstarch and set aside. Heat oil in a kadai. Add all the whole spices given in the list in the same order and let it sizzle for 30 seconds. Now add in onions and green chillies along with salt, sugar and ginger garlic paste.Fry this for 5 mins till the onion turn golden.
Add in ground coconut paste and mix well. Pour in enough water and bring it to a good boil. Cover and Simmer for 15 mins until the peas and beans are cooked. Now add in the mixed cornstarch milk into the gravy and mix well. It will get thick and shiny. Garnish with coriander leaves and serve with rice or roti.
