I recently found that hubby is loving sprouts a lot. Now I am having a huge container of sprouts in my fridge. I am making salads out of it and every now and then I am adding it into upma and so on.
But last week I thought to make sambar out of it. Everything turned out pretty good together. I loved the tart and sweet combo in that sambar. This is so much healthier and goes great with hot rice.
Take tamarind pulp in a bowl and add about half a cup of water. Now add turmeric, chilli, coriander and salt to it and mix well.Set this aside till use.
Heat oil in a deep pan. Add all the ingredients given in the tempering list and let it sizzle for a min.
Now add in onions and tomatoes and mix well. Saute this for a min.
Add in potatoes and sprouts and mix well.
Cover with water and let it cook for 15-20 mins until the potatoes is cooked and break down.
Now add in the mixed tamarind water and mix well. Let it boil for 2-3 mins until the raw flavour of tamarind goes away.
Add in a small piece of jaggery and mix well. And simmer for a couple of mins.
Garnish with coriander leaves and serve over rice.
