Ingredients for Brinjal Coconut Puli kuzhambu
- Green Long Brinjal – 2 sliced into round
- Coconut – ½ cup grated
- Oil – 3 tblspn
- Mustard seeds / Kaduku – 1 tsp
- Fenugreek seeds / Vendayam / Methi – ¼ tsp
- Urad dal / Ulundu Paruppu – 1 tsp
- Asafoetida / Hing / Kaya podi – a pinch
- Curry leaves – 2 sprig
- Onion – 1 medium size chopped
- Garlic – 10 peeled
- Chettinad Kuzhambu Masala Powder – 3 tblspn
- Water as needed
- Tamarind Pulp – 2 tblspn
- Salt to taste
- Sugar – 1 tsp

How to make Brinjal Coconut Puli kuzhambu
- Grind coconut into smooth paste. Set aside
- Heat oil in a kadai. Add in mustard, urad dal, fenugreek and curry leaves.
- Now add in onions, garlic and saute for a min.
- Add in brinjal and saute well.
- Add in the masala powder and saute well.
- Add in water, tamarind pulp, salt and sugar and mix well. now simmer this whole thing for 10 mins.
- Add in coconut and mix well. Simmer for 10 mins.
- Serve.
