Kulfi was in my to do list for a very long time, finally i made it for this summer. I made a mango kulfi this time and i have few more versions to try as well.

About this Recipe

Kulfi is a frozen dairy dessert that originated in the 16th century in the Indian subcontinent. It is a traditional sweet of the Indian subcontinent and is often referred to as traditional Indian ice cream. Kulfi is denser and creamier than ice cream. It is commonly sold by street vendors known as kulfiwallahs in India. It is popular
outside of India in Bangladesh, Myanmar, Nepal, Sri Lanka, and the Middle East. It is a staple in the cuisines of Pakistan and Trinidad and Tobago.

This is such an easy recipe to make, all you need is some milk. You don’t need any cream in this. Try to use ripe sweet mangoes in this, because that what make this. 

The word kulfi is derived from the Persian word qulfi, which means covered cup.The dessert is thought to have originated in the Mughal Empire in the 16th century. In the Indian subcontinent, the combination of dense evaporated milk was already popular in sweet dishes. This mixture was flavoured with pistachios and saffron during
the Mughal period, packed into metal cones, and immersed in slurry ice, giving rise to the invention of kulfi.

Mango Essence :
Mango essences are commonly used in food to add a mango flavour and colour to a beverage or dish preparation.

Mango Kulfi Step by Step

Take your kulfi moulds or any small cups will do

Take ripe mangoes in a blender

puree smooth
Pin
take little cornflour in a bowl

add water and mix well
Pin
take sugar in a sauce pan

bring it to a boil and cook for 15 mins till it is reduced a little

add in cornflour

mix well and cook till comes to a rolling boil..

now take it off the heat and add saffron

mix well and let it cool down

add in mango puree

add few drops of mango essence

pour it into moulds

now take it out

insert skewers or ice cream stick
