About Lamb shanks
This is the lower section of the lamb legs and the flesh surrounding this lower leg part is fleshy and chewy, perfect to make soups or broths.
This recipe tastes best if made in a simple manner and not like curry or gravy. The soup style can be dipped with naan or consumed as a soup that has many health benefits as well.
I always prefer to make soups using lamb trotters or using mutton with bones as they bring along lots of medicinal properties and are good for health.
The soup or broth made here has mild flavours with fewer spices added to the broth and takes less time to cook. The same recipe can be used to make lamb bone broth or any using other non-vegetarian bones such as chicken or goat.
This is a wonderful recipe to try out during the ongoing winters as it keeps us warm and is also a healthy way of cooking the meat.
It is basically a Persian style of making the stew but I have modified it slightly to make it appear a little bit Indian version as well.
Is Lamb healthy?
The lean portion of the lamb is healthy as it contains lots of proteins as well as other vitamins and minerals such as iron, potassium, magnesium etc which are beneficial for health.
Making the lamb recipes without using unhealthy oils and making the lean portions in a simple manner by using healthy oils and just baking them or air frying them is easy, fast as well as a healthy option.
Try using the lean parts of the lamb or goat and not use fat portions as high-fat levels are not only unhealthy but can cause serious health issues such as high cholesterol, diabetes etc…

Ingredients
lamb shanks: The lower part of the legs from a lamb have a chewy flesh attached to a large bone which has a juicy flavour if slow-cooked or pressure cooked and used here to make it as a soup-like recipe.
Olive oil: To saute or roast the lamb, using a healthy oil is preferable and here to make this recipe, I am making use of olive oil.
whole spices: Using whole spices gives a warm taste to the dish. Whole spices such as cinnamon sticks,
black peppercorns: Using black peppercorns is an essential ingredient for any soup or broth and the combination of salt and pepper gives a delicious flavour to the soup broths.
onions, garlic: Adding onions and garlic enhances the flavour of the dish and makes it yummy and flavorful.
water: To make a soupy kind of texture, water is added to the recipe and the instant pot lamb shank cannot be cooked or tenderized without water.
Step by step procedure
- Turn on the saute mode of the instant pot.
- Saute on high to medium mode.
- add olive oil in an instant pot pressure cooker once it turns hot.
- add the lamb shanks to the pressure cooker.
- roast them well for a few minutes or until nicely roasted with color change.
- Take them out carefully with the help of tongs.
- Into the same oil, add chopped garlic, saute well.
- add 2 cinnamon sticks, 1 bay leaf.
- saute few seconds.
- add chopped carrots, add chopped onion and saute until onions turn soft.
- add 8-10 black peppercorns and ginger garlic paste.
- saute well for few seconds.
- add black pepper powder, saute well.
- add salt as per taste.
- add water enough to dip the shanks.
- Put the roasted lamb shanks into the water.
- Check for salt and add if required.
- Cancel the saute mode.
- Close the lid.
- Turn the steam release valve to sealing position.
- Press the pressure cooker mode.
- Set the timer for 1 hour.
- pressure cook for 1 hour.
- Once the timer goes off, natural release the pressure.
- Open the lid and serve hot.
- Add black peppercorn powder if required and also add some chopped parsley leaves.

Ingredients
- 2 lamb shanks (cleaned and washed well)
- 2 tablespoon olive oil
- 2 cinnamon sticks
- 1 bay leaf
- 4 garlic cloves, chopped
- 1 carrot, chopped into pieces
- ¼ medium size onion, chopped
- 5-6 black peppercorns
- ½ teaspoon ginger garlic paste
- salt to taste
- ¼ teaspoon black peppercorn powder
- 4 cups water
Instructions
Turn on the saute mode of the instant pot and saute on high to medium mode.
add olive oil in an instant pot pressure cooker.
add the lamb shanks to the pressure cooker.
roast them well for few minutes or until the color changes and appears nicely roasted.
Take them out with the help of tongs.
Into the same oil, add chopped garlic, saute well.
Also, add cinnamon sticks, bay leaf.
Saute few seconds.
add chopped carrots, add chopped onion.
Saute well for few seconds.
add black peppercorns and ginger garlic paste.
saute well.
add black peppercorn powder and salt as per taste.
saute few seconds.
add enough water to dip the shanks.
Place the roasted lamb shanks in the water.
close the lid and turn the steam valve to sealing position.
Cancel the saute mode.
Press the pressure cook mode and set the timer to 1 hour.
Cook for 1 hour until timer goes off.
Natural release the pressure.
Open the lid and serve hot.

Variations
The recipe is made here in a slightly Persian style but can be modified in a curry form or adding more veggies to the stew to make it more healthy.
The lamb shanks can also be made in an oven in place of the instant pot. Using an oven-safe casserole or a pot. Add olive oil and whole spices and then saute or roast the lamb shanks and veggies in olive oil.
Add water to the meat and then allow them to slow cook in the oven for at least 2-3 hours to get a juicy texture to the lamb shanks and also to get a healthy stew. The temperature to cook in the oven should be at least 400 degrees Fahrenheit.
Always make sure to use oven cookware that can support this temperature and do a safe cooking.
Faq
It takes about 3-4 hours to slow cook the lamb shanks but since the shanks here are made in the instant pot, they can be cooked as early as in 1 hour in pressure cook mode.
The shanks can be made in any way possible and as per our liking but the only thing to consider while making an instant pot is to use saute mode while roasting or sauteing and then using pressure cook mode to tenderize the lamb shank.
Yes, the recipe can be made using any cooking technique and maintaining the right temperature to cook them as they take a longer time to cook.
