Mutton Roast Recipe

Mutton Roast Recipe with step by step picture. This is made with Mutton and Roasted Gram dal. Delicious spicy mutton roast kerala style.

Mutton Roast

Couple weeks back, hubby got some fresh mutton to cook. I was looking for a different recipe other than my mutton thoran, mutton chukka, mutton kuzhambu, chettinaad style gravy and mutton masala. You can check my mutton recipes here..I wanted to do a fried kind of dish. Actually i planned to cook the mutton and deep fry it. But somehow i ended up like this.

I will soon share a fried mutton recipe. This one is less fat i can say, since it is roasted in little oil. Actually the main flavouring for this mutton dish is curry leaves and fennel seeds. I added some kashmiri red chillies to make the dish turn out red.

Ingredients for Mutton Roast Recipe (Kerala Style)

  • Mutton – 500 grams
  • Turmeric Powder / Manjal Podi – 1 tsp
  • Salt to taste
  • Coconut Oil – 2 tbsp
  • Curry Leaves a handful
  • Roasted Gramdal / Pori kadalai / Pottu Kadalai – 2 tbsp powdered
For grinding:
  • Fennel Seeds / Sombu / Saunf – 1 tbsp
  • Kashmiri Red Chilli – 5
  • Red Chilli Powder – 2 tbsp
  • Ginger – 3 cm piece
  • Garlic – 6 fat cloves

How to make Simple Mutton Roast Recipe (Kerala Style)

  1. Take mutton in a bowl, add in salt and turmeric powder and mix well. Leave this to marinate for 15 mins.
  2. Now take a blender, add in all grinding ingredients and make it into a puree by adding some water.
  3. Add this puree to the mutton and mix well. Wash the blender with ¼ cup of water and pour that over the mutton as well.
  4. Transfer this to a pressure cooker and cook it for 3 whistle, simmer it for 20 mins.
  5. Turn the heat off and let the pressure go all by itself.
  6. Open the pressure cooker and heat again, dry out the mutton.
  7. Once it is dried, heat coconut oil in a kadai. Add a handful of curry leaves in it. Add in the dried mutton and toss well for 5 mins till it is well roasted.
  8. Add in gram dal powder and toss again for 10 mins.
  9. Once the mutton turn golden and well roasted, turn off the heat and serve.

Take mutton in a bowl

mix well and let this marinate for 15 mins

now time to blend

make it into a smooth paste

add the paste to the mutton

i washed the blender with ¼ cup of water

add that to the mutton

take a pressure cooker

add the mutton

Pressure cook

now the mutton is done

put it back on stove to evaporate the water

look the mutton is now dry

no water is left

Now heat coconut oil in a kadai

add a handful of curry leaves

add the mutton piece

saute..saute..saute..

cook till it gets nicely coloured

Add in roasted gram dal powder
