Spicy Karasev
Karasev has to be in diwali menu always. We make this in bulk and pack it in individual covers and sent to our relatives house. Amma makes this using her years old recipe, which was passed from my grandma. And it is a no fail recipe.
This is a spicy, crispy snack which is so easy to make. Just calls for simple ingredients but the measurements is the key stuff. Follow that and you will get perfect kara sev each time.
Ingredients for Karasev
- 5 cups Gram Flour / Kadalai Mavu / Besan
- 1 cup Rice Flour / Arisi Mavu
- 3 tbsp Chilli Powder
- 3 tbsp Whole Pepper
- 20 cloves Garlic
- 2 tsp Asafoetida / Hing / Kaya Podi
- to taste Salt
- Oil for Deep Frying
How to Make Karasev
- Grind Pepper, Chilli powder and Garlic to a smooth paste by adding some water.
- Take gram flour and rice flour in a bowl and add in salt. Mix this together.
- Now add in the ground masala and hing. mix well.
- Gradually add in water and make into a slightly sticky dough.
- Take your desired mould(Achu) and fill it.
- Now heat oil for deep frying. Directly pipe the whole lot straight in the oil.
- Fry till it turns crispy and remove on a paper towel.
- Now break it into small pieces and let it cool completely.
- Store this in an air tight container for several weeks.

Karasev Recipe step by step
Take all your ingredients |
take garlic, chilli powder, pepper in a blender |
make it into a fine paste |
Now add gram flour in a mixing bowl |
add in rice flour |
add salt in this |
make a well.. |
add the ground masala |
pour in water |
form a sticky dough |
now take your mould…This is called as Thenkuzhal Achu..You can use a piping bag with small tip.. |
fill that with this mixture |
heat oil for deep frying.. |
press it in.. |
fry till golden |
