Ingredients for Green Tomato Pickle
- Green Tomato – 5 to 6 chopped finely (around 3 cups)
- Salt – 1 to 2 tbsp or to taste
For Roasting & Grinding:
- Mustard Seeds – 2 tsp
- Dry Red Chilli – 6 to 8
- Fenugreek Seeds – ½ tsp
For Seasoning Oil:
- Gingelly Oil – ¼ cup
- Asafoetida / Hing / Kaya Podi – ¼ tsp
- Curry leaves a small handful

How to make Green Tomato Pickle
- Take all roasting ingredients in a pan and toast till golden. Take it in a blender and powder finely.
- Heat oil in a pan, add asafoetida and curry leaves and mix well. Let it sizzle. Now set aside so it cools
- Take chopped green tomatoes in a bowl, add in the powder, salt and mix well.
- Now pour this over the tomatoes and mix well.
- Store in a clean jar for 2 days before serving.
