Badam Ladoo | Easy Almond Laddu

Badam ladoo recipe with step by step photos. This is a quick, easy and tasty almond ladoo made with minimal ingredients. These ladoos make for a healthy sweet snack for kids and adults alike.

Sharing one more sweet recipe which is very easy and quick to make. This recipe of badam laddu is made with just 4 ingredients and within 20 minutes the ladoos can be made.

In fact these badam ladoos make for a healthy sweet snack for kids. Usually when I prepare ladoos, I do try to avoid adding sugar and prefer to add jaggery, if its possible in the recipe.

With ladoos made from nuts and seeds, you can easily add jaggery instead of sugar. You can even use palm jaggery or coconut sugar to make these ladoos.

Like most nuts, almonds are also a nutrient dense nuts. So its better to include them in your diet. Soaking almonds overnight and consuming them in the morning is a common tradition in many Indian household.

The taste of these almond ladoos is very different than the taste of badam ladoos made with a sugar or jaggery syrup. The taste is similar to the taste of ground Peanut ladoos, minus the peanut taste. Since I wanted to post a quick and easy version for Ganesh Chaturthi, I made these ladoos today, so that its easier to make during festive occasions.

You can even make these ladoos, during regular days and give to kids. I make small batches and store as ground almonds can go rancid easily. If making for festive occasions, then you can easily make a large batch by doubling or tripling the recipe. If making for your family, then you can make a small batch or just double up. Refrigerate these ladoos for a longer shelf life.

I have roasted the almonds. You can even blanch the almonds and then roast them. Since blanching, peeling each almond takes some time, roasting them is a better option as far as saving time is concerned.

Almonds are warming, so these ladoos are good during cold seasons and monsoons. For winters, you can also check these recipes:

If you do not want to add jaggery or sugar in the recipe, then I suggest to add some raisins, soaked figs and dates or dry berries as natural sweeteners. In this recipe I have used some raisins and its entirely optional to use them.

Roasting and grinding nuts-seeds is one way you can make ladoos for your family. The fats present in the nuts and seeds help in binding the ladoos and you do not need to add any ghee or oil for binding.

There are various combinations possible while using nuts, e.g. You can easily make a badam pista ladoo or kaju kishmish ladoo. Three to four dry fruits can also be added to prepare ladoos.

The recipe makes for about 10 small badam ladoos. You can serve them immediately or store them in an airtight box in the fridge.

Step-by-Step Guide

How to make Badam Ladoo

Roasting almonds

1. Heat a thick bottomed pan. Keep the heat to low or medium and add 1 cup of raw almonds.

2. Stirring at intervals, begin to roast the almonds.

3. Keep on roasting till the almonds become crunchy. Just cool and taste a few almonds. But make sure you don’t burn them or brown them too much. You can even roast the almonds in an oven.

4. When the almonds have got roasted, add 2 tablespoons of raisins. Raisins are optional and you can skip them.

5. Mix well.

6. Switch off the heat and remove the roasted almonds and raisins in another bowl or plate. Let the almonds become warm.

Grinding – making badam ladoo mixture

7. Then add both almonds and raisins in a grinder jar. Also add seeds from 3 green cardamoms.

8. Now add â…“ cup powdered jaggery. You can even use palm jaggery, coconut sugar or cane sugar instead of jaggery.

9. Run mixie or grinder for some seconds and then stop. Check the consistency. Continue in the same way, till you get a fine consistency in the almonds with some oil released from the almonds. 

You can also use the pulse option in your grinder. you have to run the grinder in parts till a bit of oil releases from the almonds.

10. Take a small portion of the ladoo mixture in your hands and then press. It should hold shape and not crumble. Don’t grind at one stretch or grind too much as then much oil will be released from the almonds and you will get almond butter.

11. Remove the badam ladoo mixture in the same bowl or plate in which we cooled the almonds and raisins.

12. Now take a small portion of the ladoo mixture in your palms and begin to shape it into ladoos.

13. Make badam laddu with the rest of the mixture. This recipe yields 10 small almond ladoos.

The recipe can be easily doubled or tripled to make a big batch. Store the ladoos in an air-tight jar and refrigerate.

14. Serve these healthy almond ladoos plain as a sweet snack.
