One of my viewer requested this recipe so many months back . I was checking out my to do recipes and found this sitting in the top list. So decided to try it out. I love this a lot, one of my collegues will bring this to office often, her mom makes the most delicious melt in mouth paal kolukattai in the world. I asked her the recipe and  have made this quite often, but forgot to take pictures of it.

As ganesh chaturthi is right around the corner, i thought this kolukattai recipe would be a great addition to the list. Although it is not traditionally made on that day, but i would love to add it to the list since this recipe is from the lord ganesh’s beloved kolukattai family. I hope you will try it out and let me know how it turned out for you.

About Paal Kozhukattai

Paal Kozhukattai is Rice flour balls cooked in a coconut milk sauce and sweetened with sugar or jaggery. Ragi paal kozhukattai is a alternate recipe for traditional rice flour kozhukattai. I have shared recipe for traditional paal kozhukattai, kozhukattai sweetened with jaggery and ragi (finger millet) paal kozhukattai as well. This recipe is traditionally made on tamil new year, ganesh chaturthi. But it makes a great dessert for parties too.

Traditionally paal kozhukattai is made into a thick batter and added to idiyappam press with large holes and pressed directly in boiling milk. But this is easier version.

You can make paal kozhukattai various number of ways. I have made using wheat flour and millet flour too.

Ingredients for Paal Kozhukattai

Rice flour:

Rice flour is important ingredients in paal kozhukattai. You can use homemade or store bought rice flour in this. 

Sweetener

You can use either sugar or jagggery as sweetener in this recipe. Traditionally jaggery is used. But if you want your paal kozhukattai to be white then use sugar. Also sugar is safe to use because jaggery may cause curdling.

Coconut Milk

Traditionally coconut milk is added in this recipe. But I have seen recipes using regular milk as well. But if you are using jaggery for the recipe, it is best to use coconut milk for flavour.

Cardamom powder

One of the main flavouring ingredient in paal kozhukattai is jaggery. A touch of dry ginger powder can be added as well.

Tips & Tricks

  • When you are using jaggery in this recipe. Never add it directly to milk or coconut milk and boil. Because it may curdle.
  • When adding jaggery dissolve in water and make it into a syrup and then add it to the mixture. Also never boil jaggery once you add it in the dish.
  • Make the dough with hot water or cook the dough so it stays soft.
  • You can serve paal kozhukattai hot or cold.
  • Paal kozhukattai dough can be made in advance and stored covered for few hours.
  • Always add the shaped balls once the milk or water starts to boil.
  • You can use cardamom powder or dry ginger powder.

How & When to Serve Paal Kozhukattai

  • You can serve paal kozhukattai hot or cold. But I like it to be served warm.
  • Ganesh chaturthi is the perfect occasion to serve paal kozhukattai. Since it is loved by lord ganesha.

Take rice flour in a bowl

Paal Kozhukattai with Jaggery

Paal Kozhukattai (using Jaggery) with Step wise pictures. This version uses jaggery in place of sugar. 

Ingredients for Paal Kozhukattai with Jaggery

  • Rice flour – 1 cup + 3 tblsp
  • Water – 1 ¼ cup + 2.5 cups
  • Salt to taste
  • Coconut – ¼ cup + ½ cup
  • Jaggery – 1 cup
  • Thick Coconut Milk – 1 cup
  • Cardamom Powder – 1 tsp
  • Oil / Ghee – 2 tsp

How to Make Paal Kozhukattai with Jaggery

  1. Take 1 ¼ cup water in a sauce pan. Sprinkle salt, oil and mix well. Add rice flour and mix well to a smooth dough. Add coconut and knead well. Take small portion and roll it into a smooth ball. Set aside.
  2. 3 tblsp rice flour in a bowl and mix well with some water to a paste.
  3. Take 2.5 cups of water in a pan and bring it to a boil. Now Add in the kozhukattai and cook for 10 mins.
  4. Add in jaggery and coconut and mix well. Cook everything for 10 more mins.
  5. Add in rice flour mix and cook till thickens. Now take off the heat and add in cardamom and thick coconut milk.
  6. Serve.

How to Make Paal Kozhukattai Dough

1)Take water in a pan. let it come to a rolling boil

2)Boil water in a pot

3)Add in salt

4)some oil

5)Add in rice flour. This is store bought rice flour.

6)mix well

7)it has absorbed all the water

8)cover it and let it cool

9)now take the dough in a bowl

10)add in coconut

11)make it into a soft dough

12)take small portion

13)roll it into a ball

14)all rolled

Process of Making Paal Kozhukattai (Traditional Method)

15)Lets make the rice flour paste. mix rice flour with water to form a thin liquid

23)Add in cane sugar or jaggery water. If you have pure jaggery add it straight to the pan. If not, dissolve it in water and strain it. Then add the strained liquid.

Paal Kozhukattai Using Ragi Flour | Ragi Paal Kozhukattai

This version of paal kozhukattai is made with ragi flour. It is a healthy version of the recipe and it also uses milk. Instead of ragi you can also use any millet flour. 

Preparation Time : 15 mins
Cooking Time :20 mins
Serves : 4

Ingredients for Ragi Paal Kozhukattai

  • Milk – 4 to 5 cups
  • Sugar -1  cup
  • Thick Coconut Milk – 1 cup
  • Cardamom Powder – 1 tsp

    For Kozhukattai:

  • Ragi Flour – 1 cup
  • Rice Flour – ½ cup
  • Milk – 1 cup
  • Ghee – 1 tsp
  • Salt – ¼ tsp
  • Water – ½ cup

How to Make Ragi Paal Kozhukattai

  1. Take ragi, rice flour, salt, water, and milk in a bowl and mix well to a runny paste.
  2. Now pour this in a non stick pan and keep cooking till it comes as a ball. Add in some ghee and knead well. Set aside too cool down. Shape small balls using this and set aside.
  3. Now in a pan, bring milk and sugar to a boil. Once it boil, add in ragi balls in the boiling milk and keep cooking them for 5 to 8 mins.
  4. Now add in coconut milk, cardamom powder and mix well.
  5. Remove this from flame and set aside for 15 mins too let the mix cool down.
  6. Serve.

Serve..This kozhukattai is so soft and tasted fantastic..You can never find this is made with ragi. The balls will look so soft, but once you cool it down, it will get right texture..
