Zucchini Tomato Pasta

Pasta is one of my favourite to cook mostly for dinner. I find it to be so satisfying and so easy to put together. My top favourite is tomato based ones and my sister loves her white sauce pasta a lot. Zucchini is my latest favourite veggie and i love to add it in pasta a lot because it gives the crunchy taste to it and it goes perfect with that.

Ingredients for Zucchini Tomato Pasta

  • Olive Oil – 5 tbsp
  • Pasta – 2 cup (any variety, i used spirals)
  • Garlic – 6 cloves chopped
  • Onion – 1 medium size chopped very finely
  • Carrot – 1 medium size chopped very finely
  • Celery – 1 medium size chopped very finely
  • Tomatoes – 4 large pureed
  • Zucchini – 1 large cubed
  • Chilli Powder – 1 tsp
  • Salt to taste
  • Sugar – 1 tsp
  • Tomato Ketchup – ¼ cup
  • Oregano – 1 tsp
  • Parmesan as needed for serving

How to Make Zucchini Tomato Pasta

  1. Heat olive oil in a pan, add in cubed zucchini and fry them till golden, drain to a plate.
  2. In the same oil, add in chopped garlic, and fry for few mins.
  3. Add in onions, celery and carrot. cook this till it gets golden.
  4. Add in the tomato puree and cook till oil separates.
  5. Now add in chilli powder, oregano, salt, sugar and ketchup. Mix well.
  6. Add in some water and simmer for few mins.
  7. Then add in the fried zucchini and mix well. Sauce done.
  8. When the sauce is cooking, you can cook the pasta in lots of boiling salted water as per package directions.
  9. Drain them and add it to the sauce.
  10. You can add some of the cooking water which you drained too.
  11. Top with lots of grated parmesan before serving.

Zucchini Tomato Pasta Recipe Step by Step

You will be needing, onion, garlic, tomatoes, carrot,
celery and some zucchini

First take tomatoes in a blender

Puree them up

Prepare your other veggies as well

Heat some olive oil in a pan

add in the zucchini

fry them up

they should turn nice and golden

remove them to a bowl

in the same oil, add in chopped garlic

saute them well

they will get golden

now add in some salt and sugar

and some tomato puree

cook them down

add in chilli powder or some chilli flakes

cook till oil separates from the mix

pour in some water

mix well..The sauce is done

while you are making the sauce, you can start
cooking the pasta on other stove..

Bring lots of water to a good boil

add salt as soon as the water starts to boil

add in the pasta, i used spirals

let them simmer and cook as per package directions

now it almost cooked

add it to the pasta

add little of the starchy cooking water which you drained
from the pasta, this will emulsify the sauce.
