Aloo chaat is a popular street snack in India. It can be served as a light dinner, a side dish, or a snack. It’s made using diced potatoes that have been boiled and fried, and it’s served with chat masala. A flexible dish that comes in a variety of regional flavours. In Hindi, the term aloo denotes potatoes, and the word chat comes from Hindi.

I added few masala to the potatoes and tossed it gently, then pan fried it. Then i topped it with plain yogurt and tamarind dates chutney and some sev. You can add green chutney as well to make it easy.

Ingredients for Aloo chaat

Baby Potatoes :
Since fresh potatoes are harvested so early, their skin is thin and sensitive, and it often feathers or peels off in parts. New potatoes are delicious roasted or boiled and don’t need to be peeled before cooking. They have a creamy texture and a delicate, slightly sweet flavour.

Amchoor Powder :

Amchoor possesses the tanginess of citrus and all of its flavour. It’s best added at the end of cooking, like citrus juice, to maintain the flavour, but it should be thoroughly mixed into whatever it’s coating. Fruit-based sauces, syrups, and compotes can also benefit from it to decrease the cloying sweetness.

Thick Curd / Yogurt :
Use fresh, cooled yoghurt, and sweeten the curd with sugar. Before adding it to the chaat, whisk it thoroughly until there are no lumps.

Chat Masala Powder:
Chaat masala is generously used for sprinkling in all chaat dishes like aloo chaat, dahi puri, bhel, etc. Chaat masala powder will add a tinge of tanginess to all the chaat dishes. A pinch of chaat masala powder with some lemon drops adds a zesty taste to fruit dishes and vegetable salads
