Chocolate Pudding

Thick and creamy pudding. I simply love the silky, creamy puddings a lot. Specially when it takes less than 5 mins to make. I am kind of addicted to that recipe. This is one pudding which I made today and is instantly addicted.

Here i am delivering you my chocolate heaven. It is creamy, rich and very very chocolaty desert. This taste so yummy. It was little dense but still creamy and tasty. A luscious chocolate creamy filling which is then topped with a thick layer of cream. Really yummy. 

About Chocolate Pudding

Chocolate puddings are a type of pudding dessert that contains chocolate flavours. There are two types: a boiled then chilled dessert, which is texturally a custard set with starch and is popular in the United States, Canada, Germany, Sweden, Poland, and East and South East Asia, and a steamed/baked version, which is texturally
similar to cake and is popular in the United Kingdom, Ireland, Australia, Germany, and New Zealand.

This chocolate pudding is second popular from my vanilla pudding and cornflakes pudding.

What is chocolate pudding?

A rich delicious chocolate pudding recipe which will make you go crazy. It is too good to resist. I personally love it warm, but you can serve it cold too. For baked chocolate pudding, check my chocolate custard pudding made in microwave and steamed chocolate pudding.

Thick pudding made using milk, sweetener, cocoa powder and any one thickener like all purpose flour, corn flour or custard powder. The pudding is then poured in serving glasses and allowed to set in fridge.

I would suggest you to add some nuts in this. It would be great if take some nut filled chocolates like dairy milk fruit and nut or something like that and use it. I decorated this with some cocoa and edible stars, you can do as you wish.

Milk – use whole or full fat milk in this recipe. If you want rich flavour, you can use half milk and half cream. For vegan version, use any plant based milk like soy milk, almond milk.

Cocoa – Cocoa powder is primarily used as a flavouring agent in baked goods such as cookies, ice cream, dairy drinks, and cakes. Always choose the finest quality cocoa which provides the intense chocolate flavour.

Sugar – I used white sugar in the recipe. But you can use brown sugar or demerara sugar. Unrefined sugar can be used.

Salt – a pinch of salt in any sweet dessert enhances the flavour.

Thickening – Cornstarch or custard powder is used for thickening. I have shared both the recipes in this recipe post.

Optional Ingredients

Chocolate Chips – Chocolate chips, also known as chocolate morsels, are small chunks of sweetened chocolate is used to intensify the chocolate flavour.

Vanilla Extract – a dash of pure vanilla extract enhances the flavour of the pudding.

How to Make Chocolate Pudding (4 Easy Steps)

Mixing Custard – Take custard powder or cornstarch, cocoa powder in a bowl and add in ¼ cup of milk and mix well. Set aside.

Cooking Pudding – Take milk and sugar in a sauce pan and bring it to a boil. Now add in the custard powder mix and whisk well. Whisk till creamy and thick. Remove it from heat and set aside to cool a bit.

Whipping Cream – Now whip up some cream with confectioners sugar till thick. Add half of the cream in the cooled custard mix and fold gently.

Serving – Spoon this into individual bowl and Top with the remaining whipped cream and sprinkle with the chocolate chips. Put this in fridge overnight. Serve.

Different Ways of Making Chocolate Pudding

Pudding can be made different ways. Eggless chocolate pudding is made by using cornstarch, custard powder for thickening the pudding. But traditionally eggs is used to thicken the pudding. For healthy option, you can use almond flour or ragi flour to thicken chocolate pudding.

Cornstarch – while this is the easy and affordable option for making chocolate pudding. Cornstarch is easily sourceable and thickens beautifully. Using cornstarch helps thickening the pudding giving it a sheen.

Custard powder – custard powder provides slightly dense and thick consistency in pudding. it is better to use vanilla flavoured or unflavoured custard powder.

Plain Flour or Wheat Flour – even though I don’t recommend using flour to thicken pudding. It gives a slight floury taste to the pudding.

Eggs – this is the more traditional pudding thickener. Usually little cornstarch is mixed with egg yolk to thicken the pudding. a knob of butter is added in the end for gloss. I used this method to make my lemon curd.

How to Make Chocolate Pudding (Step wise Pictures)

Chocolate Pudding with Cornstarch

Making Pudding Mix

1)First we are going to mix all the ingredients in a mixing bowl or directly in the sauce pan. Take cornstarch in a bowl.

2)Add in cocoa powder. Try and use the finest quality cocoa powder.

3)Add a pinch of salt to the mixture. Salt enhances the cocoa flavour.

4)add in sugar. I used refined sugar in this recipe. Mix all these ingredients together so it is well combined before adding in the milk.

5)Pour in milk. For more rich taste, you can use half milk and half cream. But I used full milk.

6)Whisk this till it is combined and looking smooth.

Cooking Chocolate Pudding

7)Now transfer this mixture to a sauce pan. We are going to cook the pudding on low heat while mixing constantly.

8)As the pudding mix heats, the mixture will start thickening. Keep mixing so it doesnt get lumpy.

9)Now as you can see the pudding mix is thick and lump free.

12)Transfer the pudding to individual serving cups and place it in fridge for few hours.

Chocolate Pudding with Custard Powder

Making Custard Cocoa Mix

1)Take custard powder in a bowl. I used vanilla flavoured custard powder.

2)Add in cocoa powder. As always use the finest quality of cocoa for better flavour.

3)Pour in some milk slowly and whisk till combined and smooth.

Boiling Milk

4)Take the remaining milk in a sauce pan. You can replace milk with any nut or plant based milk for vegan option.

5)Add in sugar to the milk and heat it.

6)Let the milk mix come up to a full boil. Keep whisking the milk so nothing catches at the bottom of the pan.

Cooking Pudding

7)Slowly pour in the custard cocoa mix into the hot milk while mixing it constantly. You have to use a hand whisk and mix constantly so nothing sticks to the bottom.

8)As you can see the pudding has thickened. Keep mixing so no lumps are formed. Take this off the heat.

Adding Chocolate & Cream

9)Now for more rich chocolate flavour, add in chopped dark chocolate into the hot pudding mixture.. You can use chocolate chips or semi sweet chocolate as well.

Add in vanilla extract and mix well.

10)Mix the chocolate into the hot mixture till it is completely melted. The residual heat from the pudding mixture will melt the chocolate. Now set this mixture aside to cool completely.

Whipped Cream

11)When the pudding mixture is cooling down, whip some cream till thick and fluffy. You can use whipping cream or dairy topping as well.

12)Add the cream into the pudding and fold gently. This lightens the pudding and makes it smooth.

Variations

Chocolate to use – I used plain dark chocolate chips to make this, But you could use your favorite chocolate like dairy milk or any chocolate. You need only 3 to 4 tbsp of that. I got around 2 big glassful of this rich desert, but it is a little too much for a single person. If you are serving this for parties, you could use mini glasses. Then I would say that you will get around 5 short glasses.

Adding Nuts : I would suggest you to add some nuts in this. It would be great if take some nut filled chocolates like dairy milk fruit and nut or something like that and use it.

Decoration: You can decorate this with some cocoa and edible stars, you can do as you wish.
