Leftover Casserole

One of the most fun things about Thanksgiving is looking forward to the leftovers for days to come–almost as much as the feast itself! Of all the many possibilities like soups, salads, and sandwiches, the mighty yet humble casserole is my favorite!

LEFTOVER THANKSGIVING CASSEROLE is the one-dish bake of your lazy post-holiday dreams. Simply layer and bake for the coziest, the most belly-warming meal you can imagine. The crisped edges of spicy bread stuffing against creamy Potatoes pops of Cranberry Sauce, and juicy Tandoori Chicken with gravy is an entire holiday in one glorious bite!

Variations

Our Indian Inspired Casserole is really a guideline more than an exact recipe. So you can use what you have and make it your own! Have, mashed sweet potatoes, roasted butternut squash, chestnut stuffing, green beans, corn, or glazed carrots? Layer it, bake it, and put your feet up.

  • Use roasted turkey in place of chicken 
  • Mashed sweet potatoes in place of white
  • Layer in your leftover veggies of choice
  • Sprinkle any leftover Brussels sprouts on top for an extra crisp

How To Assemble The Leftover Casserole

  • In a 9 X 13-inch baking dish, add a layer of mashed potatoes
  • Next, pour and spread the gravy
  • Layer cranberry sauce on top
  • Debone and shred the leftover chicken or turkey and add the pieces on top

  • Spread a layer of stuffing on top. Cover with aluminium foil.
  • Bake in a preheated oven until the sides look bubbly about 30 to 45 minutes.

Serving

Serve hot! Leftover Casserole is best enjoyed while still in your pajamas, popped in the oven between Netflix shows. Pour some hot chai (or a glass of wine), grab a blanket, and savor every bite until you make it again next year!

Leftover Thanksgiving Casserole is the one-dish bake of your lazy post-holiday dreams, an entire holiday in one glorious bite!

  • Preheat the oven to 375F.

  • In a 9 X 13-inch casserole dish add a layer of mashed potatoes. Next, pour and spread the gravy. Layer cranberry sauce on top followed by the chicken. Top with the stuffing pieces.
  • Cover the dish with an aluminum foil and bake for 30 to 45 mins or until the sides starts to bubble.
