When i found lots of baggies of bits and pieces starting from muesli to cornflakes lying around my refrigerator. I want to use them all in one single recipe and it should be healthy, at the same time it should be yummy. I planned to make granola bars, but i didn’t have honey on hand. So i decided to use up the jaggery and make a protein bar. Guess what that was really a best decision. Everyone loved it a lot and it was a huge success.
This recipe is so versatile, you can modify it as per your taste and your liking. You can neglect any ingredients in this or add anything you like. For example I used up some leftover muesli, you could easily use oats in this. You can use any nuts, my choice on that day was peanuts and roasted gram dal. You could add tons of nuts and dry fruits and make this quite rich, but i sticked with the healthy option and didn’t use that much.
How to Make Protein Bars Recipe
Take peanuts and roasted gram dal in a blender and crush them into a coarse mixture. Set them aside.
Take jaggery in a heavy bottom kadai. Add some water and mix well. Let them dissolve and come up to a boil. Let it boil for 5 mins.
Now add in all the ingredients and coconut oil and mix well.
Keep stirring so that it gets thick and leaves the sides of the kadai. It will take around 15 mins.
Now grease a plate with oil. Transfer this mixture onto the plate and flatten it well. You could use a greased plastic sheet for this.
Let it cool down for 30 mins or so.
Now slice them into bars.
Let them cool down completely. Store them in air tight container.
