Suryakala Chandrakala Sweet is a popular Indian festival sweet recipe. It is made of a crispy outer layer, sweet khoya filling, fried and soaked in a cardamom saffron scented sugar syrup. Suryakala Chandrakala Sweet Recipe

If you are not familiar with this sweet, It is deep fried delicacy which is filled with khoya and nuts, fried till crispy and drenched in a sugar syrup. This sweet is very similar to the popular North Indian sweet called as gujiya which is made during Holi festival. Even though both looks same in looks and texture, The only difference is the soaking in sugar syrup.

About Suryakala Chandrakala Sweet

Chandrakala Suryakala sweet is very popular in South Indian sweet stalls. Making this at home is not at all complicated. It has few steps to follow and it an easy sweet to make for festive occasions.

The pastry which is used for this is very straight forward made with plain flour (maida), ghee, salt and water. The filling is made with khoya, nuts and cardamom. I used sweetened khoya also known as palkova to make my job easier. If you are using unsweetened khoya then you have to add sugar in this. I have shared all the details in the recipe card.

Why the Name

A popular sweet around South Indian sweet stall. These crispy sweet is filled with sweetened khoya and nuts mixture. Deep fried and soaked in syrup makes this dripping with sugar.

Suryan means Sun; Chandran means Moon. Suryakala is shaped round resembling “sun”; chandrakala is shaped like a half moon. Hence the name.

Plain Flour

All purpose flour | maida is used in making the dough. Plain flour is mixed with ghee to create the texture of the outer shell. Whole wheat flour can be used as a healthy alternative.

Ghee

Ghee is mixed with the flour to create a shortening of the dough which makes the outer layer flaky. If you want the sweet to be rich, you can fry the sweet in ghee.

Khoya

Khoya is milk which is reduced till thick and paste like. I used Palkova so I skipped adding sugar in the filling. If you are using unsweetened khoya, you have to add ½ cup of sugar.

Sugar

Sugar is added in making of filling and syrup. The syrup has saffron and cardamom powder.

Nuts

Use mixture of nuts like cashews, almond and pistachios. Crush the nuts in a food processor or chopped til fine.

How to Make Chandrakala, Suryakala

Making Dough

  • Take flour, salt and ghee in a mixing bowl and mix together. Slowly add in water and make it into a dough. Knead this dough for 5 mins. Cover the dough with plastic wrap, chill the dough in fridge for 30 minutes.

Making Filling

  • Meanwhile make the filling by mixing sweetened khoya, crushed nuts and cardamom together. Set this aside for a moment.

For Sugar Syrup

  • Now make sugar syrup, Take sugar in a sauce pan and cover it with water. Bring this to boil and let it boil till it reaches sticky texture. It will take around 8 to 10 minutes. Set aside warm.

Shaping Sweet

  • For making Suryakala. Take two dough ball and roll into thin puri. Now take one circle and put some khoya filling in the middle. Take another circle and place it on top. Now from one end start folding in a angle and finish it to the end.(Check images & video for detail). 
  • For making Chandrakala. Take one dough ball and roll into thin puri. Now take that circle and put some khoya filling in one side. Fold it in half. Now from one end start folding in a angle and finish it to the end.(Check images & video for detail). 

Frying the Sweets

  • Bring oil for deep frying. Now fry your shaped sweets on a low flame till it gets golden and crispy. It will take around 8-10 minutes.
  • Strain them using a slotted spoon and add it to the syrup.

Soaking in Syrup

  • Now dip the sweet in sugar syrup and leave for 1 to 2 minutes. Strain it in a cooling rack. Store it in air tight container.
  • Enjoy your Diwali with these dazzling sweets.

Expert Tips

  • Make sure you use ghee or butter when making the dough. It creates a short-crust pastry texture to the dough which infact helps with the flaky texture of the sweet when frying.
  • Chill the dough for minimum of 30 minutes for easy rolling.
  • Don’t over fill the sweet, else it may leach out when frying.
  • If you are using unsweetened khoya, add ¼ cup of sugar in the filling.
  • Fry it on low heat. If you fry on high heat it will get dark colour when frying but the sweet will not be cooked properly.

Making Dough

1)Take flour in a bowl. I used plain flour.

5)Knead to a dough. Cover the dough with plastic wrap and refrigerate the dough for at least 30 minutes.

Make Filling

6)Mix khoya (I used palkova) crushed nuts, cardamom powder. I used palkova, If you are using unsweetened khoya you might need to add sugar.

Make Sugar Syrup

7)Take sugar in a sauce pan.

8)Pour in water. I added some lemon juice in this too.

9)Bring it to a boil. Cook till it gets sticky texture, it will take around 8 to 10 minutes. Finally add cardamom powder, saffron and mix well. Sugar syrup is done.

Shaping the Sweet

10)Take small portion of the dough.

13)Start sealing the edges. Check the video for clear understanding.

14)For suryakala. Take two portion of the dough, roll it, spoon filling in.

17)Heat oil for a kadai. Drop in chandrakala, suryakala and fry on low heat till crispy. it will take around 8 to 10 minutes.
