One Pot Spaghetti & Meatball Soup

I love one pot meals, because after a long tiring day at work the first thing that puts you off is making dinner. During those times these kind of one pot meals will satisfy your hunger with minimum efforts.

This recipe is been in my list for quite a long time. It is so easy to make, hardly takes under 30 to 35 mins to put together..Most of the ingredients which you use in this is from your store cupboard. But the end product is so worth it. So much flavour and so satisfying. 

In this soup, I used Spaghetti , they are a life saver because you don’t have to worry about boiling it, draining it and stuffs like that. All you have to do is, throw it straight into the boiling sauce and you are done in minutes. Not only they are easy to make, but they have a great taste and texture as well. 

Ingredients for One Pot Spaghetti & Meatball Soup

For Chicken Meatballs:
  • Minced Chicken – 300 grams
  • Salt to taste
  • Green Chillies – 2 chopped finely
  • Coriander leaves – 3 tbsp finely chopped
  • Tomato Ketchup – 1 tbsp
  • Breadcrumbs – 3 tbsp
For Soup:
  • Oil – 2 tbsp
  • Garlic – 2 tbsp finely chopped
  • Tomato Puree – 2 cup
  • Chicken Stock Cube – 1
  • Water – 3 to 4 cup
  • Chilli Powder – 1 tsp
  • Salt to taste
  • Sugar – 1 tsp
  • Barilla®Pronto™ Spaghetti – 250 grams
  • Coriander leaves a handful finely chopped

How to make One Pot Spaghetti & Meatball Soup

  1. Mix all the ingredients for meatballs and set aside.
  2. Heat oil in a soup pan, add in garlic, fry for a min.
  3. Add in tomato puree, chicken stock cube, water, salt, sugar and chilli powder. Mix well.
  4. Bring it to boil. Now spoon in meatball mix and simmer for 10 mins.
  5. Now add in spaghetti and boil it for 5 to 6 mins.
  6. Now add in coriander leaves and mix well.
